baci's baking - Guacamole Holiday Tree

The final New Year's Eve Party recipe that I'll share with you this month is a fun one to make - Guacamole Holiday Tree, an original Kraft Recipe!


Guacamole Holiday Tree

1 package cream cheese
1 ripe avocado
1 t. mayo
2 t. lime juice
1 jalapeño pepper
8 grape tomatoes, halved
1 green onion, sliced
1 box of crackers

1) Cut block of cream cheese, diagonally in half. Place triangles together on a 12” x 10” piece of plastic wrap to resemble a tree. Cover with a second piece of plastic wrap. Press to flatten cream cheese tree into a 7" tall by 6" wide tree. Peel off top sheet of plastic wrap and place onto a serving plate.
2) Mash avocado in a bowl. Add mayo and lime juice, mix well. Spread over cream cheese.
3) Decorate tree with pepper, tomatoes and onion.
4) Place 8 crackers, in two stacks of four each, to make the base of the tree trunk. Serve with remaining crackers.

My Perfect Photographer

Found The Perfect One To Capture My Perfect Day....

Step 3 was picking the perfect vendors and I asked readers to stay tuned to find out what company I would pick as my "perfect" photographer, since that was my only HUGE vendor I had not picked yet.

Eric and I had two photographers we were leaning towards. However, when I was on Facebook I saw my friend, Jenelle, had engagement pictures up and as soon as I looked at them, I fell in love with the pictures. A few weeks later her wedding pictures were posted and I decided instantly that I needed to meet with her photographer. So two photographers soon became three. We found ourselves in a little bit of a situation - so many great photographers to choose from and we could only hire one. We ended up only meeting with Montography and one other photographer. After meeting with two out of three photographers, we knew we had made a decision. Montana from Montography had a wonderful personality, prices were reasonable, she had plenty of experience, and her pictures were absolutely stunning!




I am happy to say Step 3 is complete :-)

baci's Office, Round Two - My Current Wish List {Bonus: There's a GIVEAWAY!!}

Today, I am creating baci's Office Wish List from CSN Stores because they are awesome - 200+ sites offering hands down the largest selection of items for the home and office, including gorgeous chairs from Herman Miller!

A few months after Ilario and I moved into our home, I created a Wish List for baci's Office and I'm proud to say that I've gotten everything (or at least things comparable to) on my original list. Since my office is this close to being totally finished I thought it was time for Round Two of baci's Office Wish List!

After everything is done and in its place, I plan to have a little "opening" to celebrate the completed space, along with the "new" baci (this means I have to finish the website - oh my goodness!). Here are four of my must-haves!


1) It's all wooden floors in the office so it gets a bit chilly in here. I think this ocean-toned rug would add much needed warmth and a touch of subdued color to the deep brown walls of the room. 2) I have a secret obsession for anything mirrored and this accent table would satisfy my craving for all things shiny while simultaneously providing a place for my clients to sit their drinks :o) 3) The one thing I always forget that I need, until it's time to use it, is a "Packaging Station" of sorts - something that is waist high where I can stand up and wrap all my clients' finished products. This white hall table is just the right size and has drawers and shelves for extra storage, which is awesome in my book! 4) I'd like to create a relaxed environment for my clients, so these Slipper Chairs in a Blue Woodlands Design are perfect!

baci's baking - Prosciutto Asparagus Spirals

This recipe from the Pepperidge Farm Puff Pastry box may be one of my all-time favorites - it's pretty easy and so seriously delicious! Enjoy!!


1 package (17.3 ounces) Pepperidge Farm® Puff Pastry Sheets, thawed
6 T. garlic and herb spreadable cheese, softened (I use 6 Laughing Cow Light Garlic & Herb Wedges)
8 slices prosciutto or thinly sliced deli ham
30 medium asparagus spears, trimmed

1) Heat the oven to 400°F. Unfold the pastry sheets on a lightly floured surface. Spread three tablespoons cheese on each pastry sheet. Top each with four slices prosciutto. Cut each into 15 strips crosswise, making 30 in all.
2) Tightly wrap 1 pastry strip around each asparagus spear, prosciutto-side in. Place the pastries seam-side down onto two baking sheets.
3) Bake for 15 minutes or until the pastries are golden brown.

baci's baking - Mini Spinach and Artichoke Fillo Shells

Another New Year's Eve favorite on the roster for today - Mini Spinach and Artichoke Fillo Shells! Jami found a recipe for Warm Spinach and Artichoke Cups in a magazine (recipe originally from Kraft) and we made it our own. These were nearly gone the night of the party and were just as tasty right out of the fridge the next day. Enjoy!


Mini Spinach and Artichoke Fillo Shells

2 boxes Mini Fillo Shells (about 30 shells)
1 can artichoke hearts, drained and chopped
1 cup shredded mozzarella cheese
1 package frozen chopped spinach, thawed and squeezed dry
½ cup mayonnaise
½ cup grated parmesan cheese
½ cup roasted red pepper, chopped
2 cloves garlic, pressed

1) Preheat oven to 350 degrees.
2) Line a large cookie sheet with aluminum foil and place fillo shells on top.
3) Spoon mixture into cups.
5) Bake 5 - 7 minutes of until filling is heated through.

baci's baking - Avocado Pesto-Stuffed Tomatoes

Ilario and I hosted our Annual New Year's Eve Party this year and, as always, my sister and I made way too much food! We absolutely love it though and it's a great way to try out new recipes on our friends :o) In the next few weeks I'll give you a few of our favorite recipes that were (or have always been) a huge hit!

First off, Avocado Pesto-Stuffed Tomatoes, a recipe originally from Better Homes and Gardens, were the most requested appetizer for the 2011 party. We made them, well Jami made them, last year for the first time and I was pretty sure she was going to lose her mind. I honestly didn't think I could con her into making them again, so I didn't even bother putting them on the menu for this year. . . until she asked to make them again (because they really are delicious, no matter how much of a pain they are) and then several friends asked if we were making them again. So we made some notes and observations this time around to make this recipe a little more user friendly. . . not too much, but a little :o) Enjoy!


Avocado Pesto-Stuffed Tomatoes

30 campari tomatoes or 45 grape or cherry tomatoes (about 1 1/2 pints)
1/2 medium avocado, pitted, peeled, and cut up
2 oz. cream cheese, softened
2 T. homemade or purchased basil pesto
1 t. lemon juice

1) With a sharp, serrated knife, cut a thin slice from the top of each tomato. Then cut a thin slice from bottoms of tomatoes so they stand upright.
2) (Here comes the hard part and why we recommend using the slightly larger campari tomatoes.) With a small spoon - we alternated between a 1/4 teaspoon and an espresso spoon - carefully hollow out the tomatoes (you can save the remains to use in a tomato sauce later).
3) Line a baking sheet with paper towels. Invert tomatoes on the towels. Let stand 30 minutes to drain.
4) Meanwhile, for filling, in a food processor bowl (or a bowl you can use a handheld mixer with) combine avocado, cream cheese, pesto, and lemon juice. Cover; process until smooth.
5) Spoon filling into a pastry bag fitted with an open star tip.
6) Place tomatoes, open sides up, on a serving platter. Pipe filling into the tomato cups.
7) Serve immediately or cover loosely and refrigerate up to 4 hours before serving.

Happy 2011!

So many wonderful things happened in 2010 and so many more fabulous things are to come in 2011! I honestly can't contain myself and want to work on everything we have in store all at once, but of course that would mean nothing would get done right so we won't do that ;o)

I just wanted to take a moment to extend a very sincere thank you to all of baci's clients, friends, fans and family - without you I couldn't work on something I adore as much as I do baci each and every day. Thank you for your love, your support and your beyond-appreciated gratitude - you are the best people anyone could ever ask to be surrounded by!

While we prep for all the comings of 2011, here is a little sneak peek of what you'll be seeing on the newly designed web site, set to launch early this year with photos by the always talented Brandy J Photography!
