Baci's Baking | Baked Zucchini Chips

These are a great healthy little snack!


Baked Zucchini Chips
1/4 cup dry breadcrumbs
1/4 cup (1 ounce) grated fresh Parmesan cheese
1/4 teaspoon seasoned salt
1/4 teaspoon garlic powder
1/8 teaspoon freshly ground black pepper
2 tablespoons fat-free milk
2 1/2 cups (1/4-inch-thick) slices zucchini (about 2 small)
Cooking spray

1) Preheat oven to 425°.
2) Combine first 5 ingredients in a medium bowl, stirring with a whisk.
3) Place milk in a shallow bowl.
4) Dip zucchini slices in milk, and dredge in breadcrumb mixture.
5) Place coated slices on an ovenproof wire rack coated with cooking spray; place rack on a baking sheet.
6) Bake at 425° for 30 minutes or until browned and crisp. Serve immediately.

Guest Wish List | Fab You Bliss

A huge thank you to our friend, Stephanie, for taking the time to write a Guest Wish List!!  It was supposed to go live on Friday, but taking a newborn on his first weekend away proved to be a bit more time consuming than we thought - lol :)  This is a happy bonus for a Monday though!!

Hi friends. I’m Stephanie from Fab You Bliss. Thank you for letting me drop by to share my wish list with you while Amanda is out on maternity leave. I always have a long list of things I want. So narrowing down to just four items was a bit of a challenge. But it was fun as well because who doesn’t love dreaming about items they wish to have, right?


1)  On the top of my list right now is this Mystic Tie back bib necklace. Isn’t it so pretty?

2)  Next up is this Lela Rose polka dot dress. It is so feminine and pretty and right up my alley. I’m a sucker for girly, girl outfits.

3)  I’m always on the search for a good pair of boots. These ones from Ruche are a great looking pair. They’d go nicely with the polka dot dress and bib necklace too! Hmm?

4)  And finally, this Paris Je t'aime iPhone Case is an absolute need! Paris is where my husband and I got engaged. So having a cute iPhone case like this would be perfect and sentimental for me!

Since this is my birthday week, I’m hoping I might get one or all of these as a gift(s). Wouldn’t that be great? My expectations aren’t high or anything, right? Haha!

Guest Post :: baci's baking | Nutella Banana Bread - Chandra of Oh Lovely Day

I'm so thankful for our friend Chandra of Oh Lovely Day - she's put together one yummy baci's baking post for you all!!  Be sure to head over to Chandra's site to see its new look - I'm in absolute love :o)

Hi Baci Design readers!  I'm Chandra from Oh Lovely Day and today I'm sharing one of my favorite baking recipes: Nutella Banana Bread!  It is possibly the yummiest thing I've ever baked.  Enjoy!


Nutella Banana Bread

2 cups flour
3/4 cups sugar
1 tsp baking soda
1/2 tsp salt
3 over ripe bananas
2 large eggs
1 tsp vanilla extract
6 tbs unsalted butter, melted and cooled
1/2 cup Nutella

1)  Preheat oven to 350 degrees F.  Grease 3 loaf pans.  
2)  In a large bowl combine dry ingredients.  Set aside.
3)  In a medium bowl, combine the mashed banana, eggs, butter, and vanilla.  Gently add the wet mixture into the dry mixture. Batter will be thick and lumpy.
4)  In a microwave safe bowl, heat the nutella for about 15 seconds, stir, and heat for another 15 seconds to make the nutella smooth.  Set aside.
5)  Divide half the batter among the three pans.  Spoon half the Nutella over the batter filled pans and using a butter knife, swirl the Nutella.
6)  Evenly divide the remaining batter and repeat the Nutella swirl with the remaining Nutella.
7)  Bake for 25-30 min. or until a toothpick inserted comes out clean.  Cool for 10 minutes, then remove from pan.  Slice and eat!

I like to cover at least one loaf in foil and freeze for another time.  Do it before you eat all three!

Baci's Baking | Baked Oatmeal Casserole

Since my fiancé eats enough for three people, I have started looking for recipes that are healthy and can be made in large portions. This baked oatmeal casserole provides heart healthy ingredients, is delicious, and filling for the big guy ;)


Baked Oatmeal Casserole 


2 cups gluten-free rolled oats
1/3 cup brown sugar
1 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon salt
1 cup walnut pieces
1 cup raspberries {any berries work}
1/2 cup milk chocolate chips
2 cups milk
1 large egg
3 tablespoons butter, melted
1 tablespoon vanilla extract
1 ripe banana, peeled, 1/2-inch slices

1) Preheat oven to 375°F and generously spray the inside of a 10-1/2 by 7 inch baking dish with cooking spray and place on a baking sheet.
2) In a large bowl, mix together the oats, sugar, baking powder, cinnamon, salt, half the walnuts, half the strawberries and half the chocolate. (Save the other half of strawberries, walnuts and chocolate for the top of the oatmeal).
3) In another large bowl, whisk together the milk, egg, butter and vanilla extract.
4) Add the oat mixture to prepared baking dish. Arrange the remaining strawberries, walnuts and chocolate on top. Add the banana slices to the top then pour the milk mixture over everything. Gently shake the baking dish to help the milk mixture go throughout the oats.
5) Bake 35 to 40 minutes or until the top is nicely golden brown and the milk mixture has set. For an extra tasty top, sprinkle a tablespoon or so of extra brown sugar.

8) Crates on Rustic Wedding - How gorgeous is this!! They used crates for an altar to hold their unity candle!!!
9) Chalkboards on Rustic Wedding - Simple...buy a chalkboard and write a message to your guests. I love the one they chose "As two families are becoming one. We ask that you choose a seat and not a side"

Jami's Current Wish List | Hart Of Dixie

As most of you already know I have an obsession with One Tree Hill (which was on the CW) and it has gone off the air after nine years, so now I had to find a new show and I came upon Hart of Dixie (which is also on the CW) - it is a fabulous show.
