baci's baking - Cake Mix Cookies

Oh yes, another regular weekly feature is here - "baci's baking" will showcase some of my favorite recipes each and every Tuesday! They might not actually be baking recipes each week, but I like the alliteration so we're rolling with it anyway. . .

Today's recipe was requested by the lovely Sheena, a great friend and a bride-to-be! I made Cake Mix Cookies for last weekend's adventures and she declared "I need that recipe!" when I said what I was making. So here you go, Lady, these are the greatest, moistest (I actually said that to someone this weekend - lol - suck an icky sounding word!) and easiest cookies ever. Thanks to my Grandma Sholl for the recipe - I make these all the time!

Cake Mix Cookies

1 boxed cake mix
1 cup flour
1/4 cup canola oil
3 eggs
1 scant cup of water
1 tub of store-bought frosting

Stir cake mix, flour, oil and eggs together. Add just enough water to moisten (not quite 1 cup). Drop dough onto cookie sheet (tablespoon size). Bake 10 minutes at 350. Cool completely and top with frosting.


See? SO SIMPLE!! You can truly use any flavor boxed cake mix and frosting - usually I make it with Pillsbury's Funfetti and top the cookies with Betty Crocker's Rich & Creamy Rainbow Chip Frosting. However, this weekend I used a white cake mix that I already had in the pantry, added my own sprinkles to create the look of Funfetti and topped with plain vanilla frosting - it was just as tasty! I usually try to keep a boxed cake mix and a tub of frosting around just in case I need to make a dessert for something last minute.
