baci's baking - Mashed Leftover Rosemary Potatoes

Did you make the Rosemary Potatoes from baci's "Perfect Valentine's Day Meal"? Did you have leftovers? I made the entire meal for Ilario and I, along with three of our friends (I love turning a supposed romantic holiday into a fun, friendly one), on Valentine's Day and it turned out wonderful! However, there was so much food that we had a decent amount of potatoes left and if you recall my Post-Thanksgiving rant, you'll remember that we aren't huge leftover fans. So, I decided to get creative and make mashed potatoes out of the leftovers - here's what I did and you can, too, to turn your drab leftovers into a new side dish:

2. Don't eat all the Rosemary Potatoes ;o) (I had about three hefty servings left, but you can adjust to any amount.)
3. Put leftover Rosemary Potatoes in a microwave-safe bowl and heat on high until warm (I put them in for about two minutes).
4. Add a few Tablespoons of milk, a few Tablespoons of butter and a few Tablespoons of sour cream to warm potatoes.
5. Carefully, to avoid splashing, mash potatoes with potato masher (weird how that works out, right? Lol!) until all ingredients are incorporated.
6. Give it a little taste, adjust as necessary.
7. Place bowl in microwave again to re-heat potatoes and serve. Enjoy!
