Hey everyone! So now that everyone has their decorations and outfits picked out for St. Patrick's Day from yesterday's post, why not add a great dish of Corned Beef? Here's a recipe from Food.com that will be sure to fill up all your guests before they commence on with the holiday! :)
Corned Beef in Beer (Crock Pot)

Ingredients:
3-4 lbs of corned beef brisket
6 medium potatoes, peeled and quartered
2 medium onions, peeled and quartered
1 cup thinly sliced carrot
1 bay leaf (or two small ones)
1 cup beer
1 small cabbage, cut in wedges (optional)
Directions:
1. Place potatoes, onion, carrot and bay leaf in crock pot.
2. Trim excess fat from brisket; place on top of vegetables in crock pot.
3. If desired, place cabbage on top of meat.
4. Pour beer over all.
5. Cover and cook on LOW fro 9-11 hours.
6. Slice brisket thinly against grain (letting it cool 5-10 minutes will allow for easier cutting).
7. Serve with vegetables.
