baci's baking - Chicken Fried Rice

This is pretty random, but I bought bean sprouts the other day to make summer rolls and I had some left over so I thought I'd give Chicken Fried Rice a try ;) I told you it was random . .

I totally tweaked the recipe I found on About.com and it turned out so good that I just had to share!

Chicken Fried Rice
4 cups cold, cooked brown rice
8 oz. cooked chicken, diced
2 eggs
1 green onion, diced (optional)
1/2 cup bean sprouts
Low Sodium Soy Sauce, to taste
salt
pepper
olive oil

1) Beat the eggs lightly with a fork and add a dash of salt.
2) Heat a wok or a large frying pan and add oil. When oil is warm, add the egg mixture into the wok and cook over medium heat, turning over once. Cut the egg into thin strips and save for later.
3) Stir-fry the onion on high heat for a few moments, remove and set aside. Do the same for the bean sprouts.
4) Add oil and turn down the heat to medium and stir-fry the rice. Add soy sauce, salt and pepper to taste. Add the chicken, onion, bean sprouts and egg, combining thoroughly and heating until all is warm. Enjoy!
