baci's baking - Spinach-stuffed Chicken

Today's baci's baking is courtesy of my Mom - what's funny though is she gave me the recipe and when I thanked her for it after I made it (because it was SO tasty!!) she told me that was great because she hadn't even had it yet - lol!

Spinach-stuffed Chicken

6 chicken breasts
2 (10 oz.) packages frozen spinach, thawed and squeezed dry
1 cup Swiss cheese
¾ cup ricotta
⅓ cup Parmesan cheese
3 T. chopped onion
1 clove garlic, pressed
¼ t. salt
¼ t. pepper
¼ t. ground nutmeg
2 T. olive oil
1 t. paprika
½ t. oregano
½ t. thyme

1) Preheat oven to 350°F. Grease 9x13-inch pan.
2) Mix spinach, all three cheeses, onion, garlic, salt, pepper and nutmeg together. Set aside.
3) Slice chicken breasts and stuff with spinach mixture.
4) Mix oil, paprika, oregano and thyme together and pour evenly over chicken breasts.
5) Bake for 1 hour to 1¼ hours.
