Baci's Baking | Canastitas Caprese

Canastitas Caprese - You might not be able to say the word, but they sure do look delicious :) What's better than cheese and tomatoes? NOTHING because it's the best combination EVER :)


Canastitas Caprese

Ingredients
12 empanada shells
3 small tomatoes, chopped
6 oz. mozzarella cheese, diced
10 basil leaves, chiffonade [thinly sliced]
kosher salt and freshly ground black pepper to taste

Directions
1)  Preheat the oven to 425ºF. Line a baking sheet with parchment paper.
2)  Form a ½-inch pleat by pinching together the side of the empanada shell. Fold the pleat over and press firmly against the edge of the dough. Continue to pleat and fold the empanada shell in this manner until it forms a basket shape. Place it on the baking sheet, covered with a slightly dampened dish towel. 3)  Repeat the shaping process with the rest of the empanada shells.
4)  Evenly divide half of the cheese cubes among the canastitas, followed by all of the chopped tomato and basil. Sprinkle a tiny pinch of salt and a grind of pepper over each canastita. Top the canastitas with the remaining cheese.
5)  Bake in the oven for about 15 minutes or until the dough and cheese turn lightly golden brown. 6)  Allow the canastitas to cool for 5 minutes before serving.

Yields 12 servings

Handpicked | Nasty Gal Vintage-style Clothing

I was searching for clothes and came upon this clothing store called Nasty Gal and it reminds me of clothes from Pretty Woman!! I LOVE that movie and I love that this type of “vintage” style is coming back. I may not be brave enough to try all of these clothes, but I love them!!

Caitlin's Current Wish List | Bucket List

My current wish list features a few of the things that I want to accomplish before I kick the bucket ;) They include exploring the great outdoors, meeting my favorite singer and challenging myself to push new limits!

1) I would love to see the Northern Lights! Such a beautiful, natural phenomenon!
2) A huge goal of mine is to hike a portion of the Appalachian Trail.
3) Of course I would absolutely love to meet my favorite swooner, Mr. Michael Buble!
4) Finally, I think it would be such a great experience to finish, at least, the Cleveland Half Marathon! I've got some training to do ;)

Baci's Baking | Perfect Potato Soup

It's getting pretty chilly outside, but this perfect potato soup is here to save the day! Hot, hearty and delicious!


Perfect Potato Soup

Small Russet potatoes
carrots
celery
onions
milk
flour
heavy cream
salt
pepper
Cajun spice
parsley
thin bacon

1) Start by slicing the bacon into small pieces.
2) Throw the bacon into a soup pot over medium heat and stir it around until the fat is rendered and the bacon is crisp.
3) Remove the bacon from the pot.
4) Dice the onion, celery and carrots and throw them in the pot over medium heat.
5) Dice the potatoes, add them to the pot and let them cook for about 5 minutes.
6) Add plenty of salt and pepper as well as 6-8 cups of chicken broth.
7) Bring to a boil and let cook for 10 minutes.
8) Mix together some milk and flour and whisk until smooth.
9) Pour flour and milk mix into soup and let cook for another 5 minutes.
10) Remove about half of the soup from the pot and puree it.
11) Pour the pureed soup back into the pot along with ¼ to ½ cup of heavy cream.
12) Stir and add some Cajun salt for taste.
13) Add the diced parsley, bacon and cheese to your liking.

Amanda's Current Wish List | Master Bedroom Finishes

These last few touches would perfectly complete our Master Bedroom Redesign!!

1)  Multi-mat Frames - I've had my eye on these for a while, they would be perfect to frame all of the photo goodness that is to come of Baby C!!
2)  Seagrass Rattan Hamper - Our current hamper has seen better days - this one would be a great replacement!
3)  Elaine Accent Chair - In absolute love with this!!!
4)  Vintage Charm Wooden Stool - I currently sit on the floor in front of the mirror in our room to do my makeup (a habit I have had since my middle school years) and having a stool to sit on instead would make my life much easier.  Though this is something that would have made my pregnancy even easier, lol!!

Cursaro Holiday, Pet + Maternity Session | Photo Shoot by JaNicki Photography {Cuyahoga Falls, Ohio}



A few months back we had the pleasure of having our photos taken by the lovely Margaret of JaNicki Photography for our annual holiday card - we even snuck in time for some fabulous images of Morris and a mini-maternity shoot!  I'm so thankful to have such talented friends - I just love the way everything turned out!!

The first set of photos also serve as sort of an unveiling of our newly decorated bedroom.  Re-doing our Master was at the top of my "To Do Before Baby Arrives" List because I knew if we didn't do it now, we never would.  I'm so happy it's all set to go :o)  A new upholstered bed with nailhead trim from Skyline Furniture, a bedroom suite from Ikea - The HEMNES series in grey-brown, lamps from Bed Bath & Beyond (that I sought out for months!), shades I instantly fell in love with from Target (they inspired most of the re-design), the perfect bench for the foot of our bed (one similar), new curtains and rods all made our original duvet and quilt set (here's one similar) really come together!  Check out the few items still on my wish list to complete the room with My Current Wish List | The Master Bedroom tomorrow!

Baguette Chips (You can make your own or buy some pre-made like these from Pillsbury)
Mayonnaise
Cooked Bacon
Romaine Lettuce
Cherry Tomatoes

1)  Lay the baguette chips out on a plate or platter and top with a thin layer of mayonnaise.
2)  Top with small pieces of cooked bacon, lettuce and slice of tomato - Done Already!  Enjoy!

1}  Designed Our Very First Invitation Suite for Official Baci Clients - Camille and Jacob were our first clients ever - what brave souls, lol!  It's so much fun to look back at this design and see how it all began :)

2}  Jami Gets Married! - Our very own Jami - my little sister - getting married was such a wonderful experience both personally and professionally!  All the goodness we created for her big day was absolutely stunning and watching her marry her best friend was incredibly special.

Happy New Year!!!

I'm not really sure how it happened so quickly, but 2013 is here! A lot has happened in the past year and we couldn't be more grateful for how it all turned out :) We are very excited for what's to come and have a lot of great plans for the future.
