baci's baking - Hot Artichoke Dip

As I promised last Thursday in the first official baci's book club post - today's recipe is from our member, Teri Lucas! She brought her Hot Artichoke Dip to our last meeting and it was delicious - enjoy!!

Hot Artichoke Dip

1 14 oz. can artichoke hearts, chopped
1 cup sour cream
1 cup mayonnaise
1 cup shredded monterrey jack cheese
1/2 cup shredded parmesan cheese

1) Mix all ingredients in a shallow baking dish.
2) Bake, uncovered, at 350 degrees for 30 minutes.

baci's book club - May 2011 - Water for Elephants

I'm so excited about today's first official baci's book club discussion :o) It's great timing because all the baci's book club eMembers are receiving their free baci's bookmarks this week in the mail!! You can still sign up and receive yours, too!


Baci's book club met at my home last Thursday, May 19th and discussed Sara Gruen's Water for Elephants - "An atmospheric, gritty, and compelling novel of star-crossed lovers, set in the circus world circa 1932, by the bestselling author of Riding Lessons {source}.

WARNING, the following discussion may act as a Spoiler Alert!!

There were a few people (myself included) who had read it when it originally came out a few years ago, but most everyone was reading it for the first time. All in all everyone loved the book! A few of us (me this time, too) felt that the circus history was a bit dull, but when we all sat down and thought about it again we realized that it really was so interesting to see what the circus was like in the past - all the drama, death, murder and betrayal really opened our eyes. We all really liked the times with Jacob living in the nursing home - he was an adorable, ornery old man :o)

The most impacting events we felt were the animal abuse (it really broke our hearts, terribly!), Rosie "speaking" Polish (I just wanted to squeeze her!!) and the passing of Walter (we all truly grew to love the rotten guy throughout the book). The book truly had a little bit of everything - drama, romance, sadness - it is a great read and we would most certainly recommend it!

We honestly can't wait to see the movie - there are plans in the works to see it together as a group in a few weeks :o) Have any of you seen the movie? How does it compare to the book?

Centerpiece Decisions!

If you checked out the Handpicked - Centerpieces post on Monday, you can see why centerpieces have been on my mind lately.

My mom and I went to Fort Wayne last week and tried to do some "centerpiece" shopping for the wedding. We went to five different stores but let's be honest, we only came back with one item (several of them though) to put in clear vases for one of the centerpieces. We knew what to look for, but the hardest part is finding it, and in the right color. I'm sure other brides have had this problem (back me up ladies)!!

As you have seen in my previous post (and if you haven't, you should totally check it out, ha) that there are so many ideas for centerpieces, and I felt like I wanted to incorporate ALL of them, however that was not and is not possible--unless I wanted to spend an arm and leg :) I think it is very important to at least have two different centerpieces though to have a little bit of variety at your reception. So I narrowed all of my ideas down to three different types of centerpieces which I will add my own personality to each one as well. Below are four photos that have served as inspiration throughout the process :)

Wedding Wednesday | Engagement Pictures

FINALLY!!

After 3 different re-schedules (because of stupid mother nature--dang rain) Eric and I got to take our engagement pictures yesterday!! We can't wait to see them (well, mostly me, because boys....they don't really care--ha--but as long as I'm happy, he cares). Our photographer was Montana from Montography Photography out of Wauseon, Ohio.

Now I don't know if any other girls were like me when getting ready for pictures, FREAKING OUT!!! Eric just kept telling me to calm down, they're just pictures, no need to worry. His advice didn't go far (until we started taking our pictures). I was worried about what to wear and making sure we matched and all that good stuff. However, as soon as we started taking pictures, I knew we were in good hands because Montana is an amazing photographer!!

One thing I would like to share was our funny "experience" at Goll Woods near Archbold, Ohio. We went there and as soon as we opened our car doors to get out there were THOUSANDS...not exaggerating...of mosquitoes!! We put on spray and sucked it up for a few pictures. Montana probably has some good ones of Eric and I swatting at them :)

We couldn't have asked for a more beautiful day though!! Stay tuned for engagement pictures :)

baci's baking - Taco Seasoning Mix

Since I found this recipe (and tweaked, of course!) I haven't bought a single taco seasoning packet - it's perfect and makes a nice, large batch that you can store in an air tight container. Mmm. . . I think I'll be making some tacos this week :o)

Taco Seasoning Mix
(Printer-friendly Link)

4 T. minced onion
2 T. chili powder
2 t. paprika
2 t. red pepper flakes
1½ t. dried oregano
½ t. dried marjoram
4 t. salt
¼ t. pepper
1 T. cornstarch
1 T. minced garlic
2 t. ground cumin

1) Mix ingredients together thoroughly with a whisk.
2) Transfer mixture to a tightly closed container with lid.
3) Store in a cool, dry place and use within 6 months.

To me, a centerpiece brings everything together at the reception. A Centerpiece can show how much work you put into your wedding, so make it look your best. As all of you know, there are thousands of ways to "decorate" your centerpieces, but unfortunately I can't show that many, so nine will have to do :) Enjoy!

Spring Dresses - My Current Wishlist

If you read my previous wishlist, you know that I am getting into the "spring" mood (yes, even though summer is right around the corner--ha) with a nice pair of sunglasses, so now I need a cute dress to go with the accessory!!

So I headed on over to the JCPenney website and found four cute, spring dresses for a wonderful price!

1) MNG by Mango Sundress - $55.92 - Perfect, fun spring dress for any occasion. 2) American Living Pleated Dot Sundress with pockets - $49.99 - This dress reminds me of Julie Roberts in Pretty Woman!!! Who wouldn't love this!! 3) I 'Heart' Ronson Eyelet Dress - $24.99 - Cute, simple white dress with a little belt. 4) Pleated Top Jacquard Sundress - $34.99 - I like this coral color a lot!!

Do Your Part on NF Awareness Day!

Our lives were touched by David Bezbatchenko, our dear friend's brother who passed away on February 14, 2009 after a three and a half year battle with a brain tumor caused by Neurofibromatosis (NF), a genetic disorder that causes tumors to grow along nerves anywhere in the body and can affect the development of bones and skin. Each year the Bezbatchenko Family holds the David Bezbatchenko Memorial Golf Classic in his honor and baci has not only donated to the cause, but designs most of the correspondence for the tournament. Proceeds from the tournament benefit The Children's Tumor Foundation, a non-profit medical foundation, dedicated to improving the health and well being of individuals and families affected by NF.

So you can imagine that next Tuesday, NF Awareness Day, is special to us. Well, it's also special to Cavaliers owner, Dan Gilbert - his 14-year-old son, Nick, was born with NF and has suffered the loss of vision in one eye, had brain surgery and endured four rounds of chemotherapy. Nick is the 2011 National Children's Tumor Foundation Ambassador and will represent the Cavs at the NBA Draft lottery.

Here's where you can help - supporters can donate $10 to help The Children's Tumor Foundation fight NF by texting CTF to 20222. The Cavs and Dan Gilbert will be matching each dollar donated to CTF through the lottery! Help support a wonderful cause that touches so many lives!!

Wedding Wednesday | Miranda Lambert and Blake Shelton Tie the Knot!


Two of my favorite country singers, Miranda Lambert and Blake Shelton, were wed this past Saturday in Texas. The couple certainly did their country and western roots justice - they could not be cuter!!

Miranda wore her mother's wedding dress (I really hope this becomes a trend because it's the sweetest thing!) and finished her look with custom made cowboy boots by Casadei. Hottie Blake wrote a song called "Let's Grow Old Together" just for the occasion and played it right before his bride walked down the aisle - once again, SO SWEET!!

If only all brides and grooms could be as musically inclined as these - lol ;o) In all reality though, any wedding couple can take a note from Miranda and Blake's big day - sentimental and personal touches really do make for a perfect wedding. It doesn't have to be big or incredibly expensive, it simply needs to be about the two of you and your new life together. Make it special for you and it will be special for all of your guests!

Wedding Wednesday | Wedding Website

I have been working on Eric and I's wedding website for about six months (only because Eric has not asked all the Ushers yet--yes, there are only five months until our wedding and he has not asked everyone yet--ha, guys!!)

I have also had HUGE help from Ilario and Amanda with my wedding website, Ilario for being the tech guy himself and Amanda for some wonderful ideas and a second eye to catch any errors!!

Our website is not done yet, but don't worry, when it's ready, I will post about it to let the whole world know, but in the meantime, I am going to write about some ideas you can use for your own wedding website.

It took me a while to figure out exactly what I wanted. Some of the necessities are: a little bit of information about you and your fiance, the proposal, who is in your wedding, and information about the wedding (when and where).

And of course you can add a whole lot more information on there, depending on what you want everyone else to know, however keep in mind it is a wedding website :)

The great thing about them though is you can make it truly about you in your own style. You can normally design the page and just have fun with it. I added pictures to Eric and I's website to make it more personal.

So stay tuned for our wedding website!!! It all relies on Eric asking his last Usher---so don't hold your breathe :) ha

baci's baking - Choco-berry Tartlets

I made these tasty tartlets this past weekend for a bridal shower - they're not only delicious, but they're the perfect bite-sized adorableness for a dessert buffet like we had ;o) Enjoy!


Choco-berry Tartlets
Original Recipe from BHG

1 cup bittersweet chocolate pieces
1/2 of a 14-oz. can (2/3 cup) sweetened condensed milk
1/2 cup seedless red raspberry jam
1/2 cup coconut
1/2 cup butter, softened
3/4 cup sugar
1 egg
1-1/2 t. vanilla
1-2/3 cups all-purpose flour
1/3 cup unsweetened cocoa powder
1/4 t. baking powder
1/4 t. baking soda
1/4 t. salt

1) For filling, in medium saucepan combine chocolate and milk.
2) Stir over low heat just until chocolate is melted and smooth; remove from heat.
3) Stir in jam.
4) Fold in coconut. Cover; set aside.
5) Preheat oven to 350F. Grease thirty-six 1-3/4-inch muffin cups (recipe works best in metal pans); set aside.
6) In a large mixing bowl beat butter with electric mixer for 30 seconds.
7) Beat in sugar, egg, and vanilla until well combined.
8) Add flour, cocoa powder, baking powder, baking soda, and salt. Beat on medium speed just until combined.
9) Divide dough in 36 equal pieces; shape in 1-inch balls.
10) Evenly press a ball of dough on bottom and up sides of each muffin cup.
11) Divide filling among cups.
12) Bake for 10 to 12 minutes or until crust is set and dry.
13) Cool in muffin cups on wire rack for 15 minutes.
14) Carefully remove tartlets; cool completely on rack.
15) Sprinkle with sifted powdered sugar.
Makes 36 tartlets.

Handpicked - Bridesmaid Jewelry

To me, bridesmaid jewelry used to be one of the easiest things to pick out. You went and bought a cute silver necklace and earring set, and you were done. However, that isn't the case anymore. Brides have tons of options to choose from for their bridesmaids--just the necklace....just the earrings...just the bracelet...and even just a ring...or you can make a set out of 2 or 3 of these items and they're not just silver and gold anymore either. Etsy Handbags - My Current Wishlist

1) I absolutely love handbags and 2) I absolutely love Etsy!!

I have been looking for a cute, simple handbag for the summer and I found 4 that are amazing and the price is right from the wonderful Etsy!!


1) Chartreuse and Grey Foliage Birds Mini Tote Bag and Pouch - $28 - I really like this pattern and it's not huge, so I can use it when I do not have much to carry. 2) Deep purple canvas lines bag - $39 - I LOVE this purple bag!! 3) Delila bag - $68 - Again, I really like this pattern and the straps are long enough where you can carry it like a messenger bag. 4) Summer tote - $39 - Perfect for a day out by the lake with friends!

Wedding Wednesday | Wedding Day Involvement

Question: Is it possible to involve EVERYONE in your wedding day?


Answer: No, probably not....but we will sure try!!

Every since I started planning for my wedding, I have been slightly stressed trying to figure out a way to involve all my friends, girls and guys, in my wedding. So I started making a list of ways for people to be involved and matched names to it. This sounds simple, but again, it was not, it lead to more stress. Only because through out months of planning you make friends and loose friends. I am here to tell you when you are picking people to be involved, make sure they are people who will be there for you and help you through the wedding process, not someone you think you will not be friends with after you get married or will stress you out even more.

Here is a list of ways for some of your favorite people to be involved
1- Bridesmaid
2- Groomsmen
3- Usher (you need 1 for every 100 people you invite)
4- Flower Girl/Ring Bearer
5- Greeter/Program Passer (make sure this person is friendly--after all, this will be the 1st person your guest meets)
6- Guest Book Attendant (Can have 1 or 2 people--depending on how big your wedding is)
7- Readers (I'm Catholic, so I need 3 people to read passages I've chosen)
8- Bubble Passer
9- Reception Hostess (to help anyone find their seat if you have a seating chart, or to just be there to help answer any questions the guests have)
10- Photographer
11- Wedding Planner
12- Eucharistic Ministers (Again, Catholic, so I need 3 of these to help our Priest)
13- Wedding Day Assistant (Someone to keep you sane throughout the whole day, make sure all the little things are put together and done right)
14- Singers (If you have a friend that can belt out beautiful notes, don't be afraid to ask them to sing a song during your wedding)
15- Cake Cutters ( I would suggest 4 people--2 on each side of the table to keep everything moving smoothly)
16- Reception Perfectionist (He or She will MAKE sure the reception looks just as beautiful as you wanted it to)


These are just 16 ways I can think of and there might be more! But don't be afraid to ask for help when getting things around for your wedding. Remember all those people who said "if you ever need help, just let me know" right after you got engaged--go find them :-)

baci's baking - A Royal Wedding Feast

Well, actually a Royal Wedding Viewing Party Feast, but who's comparing ;o)

Friday's Party was a success so I thought I'd share with you all the tasty treats I made (with the help of my lovely husband and a few great friends - THANK YOU!), complete with a recipe that I would never in a million years make. More on that later.

First off, the favors for all the guests in attendance were. . . a surprise - lol! I will tell you that they were made with my Grandma Sholl's Old Fashioned Sugar Cookies! I also made a past baci's baking recipe - Smoked Salmon Tea Sandwiches, an all-time favorite of mine.

For dessert, I baked Sticky Fingers Bakeries Original Recipe Scones - they are so delicious - complete with Strawberry-Rhubarb Jam and Clotted Cream (it's waaay tastier than it sounds, I swear!). I also made a tweaked version of Ms. Martha's Almond Petit Fours combined with the Food Network's Fondant Glaze to create British Fondant Fancies (recipe to follow).

To top off the savory portion of the party, I served various cheeses (I really recommend serving Parmigiano Reggiano on it's own instead of just shredded on top of things - everyone fell in love!), cured meats and the scrumptious Grands! Mini Biscuits. I also had my lovely husband make and assemble the "Best Cucumber Sandwiches" (recipe to follow) - which is a HUGE deal because I 100% despise cucumbers and anything that has to do with cucumbers. The fact that I a) bought a cucumber and b) let the smell of cut cucumbers into my kitchen just goes to show how much I love my clients, local vendors, friends and family. They must have been good because there wasn't a single one left - I will never know.

Almond Petit Fours (or Fondant Fancies if you're going British)
Original Recipes from Martha Stewart and Food Network

6 T. unsalted butter, softened, plus more for baking sheet
1 1/4 cups flour (not self-rising), plus more for baking sheet
3/4 t. baking powder
1/4 t. baking soda
1/4 t. salt
1 1/4 cup sugar, separated
1/2 t. almond extract
4 large eggs, separated (I always forget this, that's why I'm bolding it - lol!)
1/2 t. pure vanilla extract
1/2 cup whole milk
1/2 cup preserves (Any kind will do, I used raspberry this time around.)

For the Fondant:
2/3 cup corn syrup
2/3 cup hot water
7 cups powdered sugar
Food coloring

1) Preheat oven to 350 degrees. Butter a 12-by-17- inch rimmed baking sheet and line with parchment paper. Butter (or spray) parchment and dust with flour, tapping out excess; set aside.
2) Mix flour, baking powder, baking soda and salt into a large bowl; set aside.
3) Put 1 cup sugar and the almond extract into the bowl of an electric mixer fitted with the paddle attachment. Mix on medium-low speed until mixture resembles coarse meal, about 2 minutes.
4) Raise speed to medium-high. Add butter; mix until pale and fluffy, about 2 minutes.
5) Mix in egg yolks and vanilla.
6) Add flour mixture in 2 batches, alternating with the milk. Transfer to a large bowl; set aside.
7) Put egg whites into the clean bowl of an electric mixer fitted with whisk attachment; beat on medium-high speed until foamy. Gradually add remaining 1/4 cup sugar, beating until soft peaks form.
8) Fold one-third of egg-white mixture into batter with a rubber spatula. Gently fold in remaining egg-white mixture.
9) Spread evenly into prepared sheet. Bake until a cake tester inserted into center comes out clean, 15 to 20 minutes.
10)Transfer sheet to wire rack; let cool completely. Unmold; remove parchment.
11) Cut cake in half crosswise.
12) Spread one half with preserves; top with remaining half. Refrigerate 1 hour.
13) Trim cake, and cut into 1 1/2-inch squares. Transfer to a wire rack set over a rimmed baking sheet.
14) To make the fondant: Whisk the corn syrup into the hot water until dissolved, then whisk in the powdered sugar until smooth. If desired, divide into smaller bowls and color with food coloring, adding color until you achieve the proper shade.
15) Pour fondant over each petit four, spreading over top and sides to coat completely. Reuse glaze, straining to remove any solids, if needed.
16) Refrigerate until set, about 20 minutes. Garnish with decorations, if desired.


Best Cucumber Sandwiches

1 medium cucumber
1/2 cp. cider vinegar
1 cup water
8 oz. package reduced fat cream cheese, softened
1/4 cup mayonnaise
1/4 t. garlic powder
1/4 t. onion salt
dash Worcestershire
1 loaf sliced, firm-textured bread
garnish-thinly sliced pimento-stuffed green olives or paprika (Optional)

1) Score cucumber lengthwise with fork (for looks) and slice thin.
2) In medium bowl, combine vinegar and water, add cucumber slices; let stand at room temp. at least 30 min.
3) Drain WELL.
4) Meanwhile, combine cream cheese, mayo, garlic powder, onion salt and Worcestershire.
5) Cut bread slices into rounds, or any shape you want, with a cookie cutter (We just used the cocktail size loaves that are already cut into small pretty squares - so much quicker!) and spread with cream cheese mixture. Top each with a slice of cucumber.
6) Shortly before serving top with olive slice or paprika, or both.

Makes about 48 round tea sandwiches.
